Vegan Brown Sugar Coconut Iced Latte

This vegan brown sugar coconut iced latte is the perfect drink for a sunny day. You will instantly feel energized and ready to tackle the day!

I don’t know about you, but coconut always reminds me of summer and tropical beaches. I remember when I used to drink coconut milk straight out of a coconut on the coast of Brazil. Ugh, how times change.

Lately I’ve also seen many Starbucks copycat drinks and brown sugar syrup really seems to be a thing. Well, it sounded delicious so I had to give it a try! This latte is simply made with coffee, brown sugar syrup and coconut milk. You can also play with the ratios and use any kind of coffee you like: cold brew, espresso, americano, French pressed.

HOW TO MAKE BROWN SUGAR SYRUP

This is crazy simple. I think sugar syrup is probably the easiest thing to make ever. Just use equal parts water and sugar and let it melt over medium heat. Once the sugar has dissolved, the syrup is ready!
I use dark Demerara sugar because I like the flavour, but you can use dark brown sugar, light brown sugar or even Muscovado sugar (in this case it’ll be a bit less sweet).

Ingredients

  • 1 cup of cold brew coffee (or as much or as little as you want)
  • 1/2 cup of coconut milk
  • 1-2 tbsp of brown sugar syrup, to taste
  • lots of ice

To make your own brown sugar syrup:

  • 2 tbsps of brown sugar
  • 2 tbsps of water

Instructions

  1. Let's start by making the brown sugar syrup. You can make as much as you want, just use equal parts sugar and water. This recipe will make just enough for 2 tablespoons of syrup. If you already know you will use just 1 tablespoon, use 1 tbsp of sugar and 1 tbsp of water. Put both in a small saucepan over medium heat and wait until the sugar is dissolved. Remove from heat and leave to cool.
  2. Fill a glass with ice. This recipe makes a full tall glass, but you can make less using just an espresso shot, or use less or more milk. You do you. Pour in the coffee, then the sugar syrup and lightly stir. Add the coconut milk and stir again to combine.
