Pea, Mint and Avocado Soup (vegan)

Soup is only for winter? Think again!

Spring is thriving and this means only one thing: we are in pea season! This pea, mint and avocado soup is one of my favourite spring recipes and flavour combos. The soup is light, creamy and fresh thanks to the mint. It’s super versatile and perfect for warm days, as you can also serve it cold or at room temperature.

You can eat it on its own, use it as a side or even as a pasta sauce with other spring vegetables like asparagus! I’ll post another recipe soon using this soup as the base of a rice bowl with spicy ginger shrimps. Other meal ideas

LET’S MAKE THE SOUP!

Start by dicing half a small onion or shallot and then sweat it a pan with about a tablespoon of olive oil. If you want you can also add garlic, but I prefer to keep this light since it’s such a fresh soup. Then add the peas to the onion and cook until tender. You’ll need only a couple of minutes.

In a blender or food processor, add the peas and onion and all the other ingredients. I like to save some of the peas to put on top of the soup later as a garnish and to give some extra texture. Start blending and add more water or broth as you go if you want a more liquid consistency. Then taste and adjust the seasoning. Done!

You can serve right away, warm it up or eat it cold, however you want! Garnish with the leftover peas, some olive oil, chopped mint and vegan or regular cream if you like it!

Ingredients

  • 2 cups of frozen or fresh peas (350 g)
  • half of a small onion or shallot
  • 1 tbsp of olive oil
  • half of an avocado
  • 6-7 mint leaves
  • 3/4 cup of water or vegetable broth
  • salt and pepper to taste

Instructions

  1. Start by dicing the onion or shallot. If you want you can also add garlic, but I prefer to keep this light and simple.
  2. In a frying pan, pour the olive oil and start sweating the onion. Then add the peas and cook until tender. You'll need only a couple of minutes.
  3. In a blender or food processor, add all the other ingredients. I like to reserve some of the peas to put on top of the soup later. Start blending and add more water or broth if you want a more liquid consistency. Taste and adjust the seasoning.
  4. You can serve right away, warm it up or eat it cold, however you want! Garnish with the leftover peas, some olive oil and vegan cream if you like it!

Notes

This soup can be eaten hot, warm or cold. You can serve it with rice or croutons or even use it as a pasta sauce!

If you're not vegan, you can use regular cream when serving.
